Sharbat-e Khakshir - Flixweed Seeds Drink

Sharbate Khakshir or Khake Shir is a refreshing Persian drink that is mostly used as a thirst quencher on hot summer days in Iran. Flixweed seeds (also known as Descurainia sophia or herb-Sophia or tansy mustard) have many health benefits. They are used as a home remedy to treat asthma, fevers, bronchitis, and many more ailments.

The mixture of Khake Shir and saffron makes the perfect luxurious drink for you and your guests at your next summer garden party.

Time Method 1

Prep: 10 min

Total: 10 min

Time Method 2

Prep: 15 min

Freezing: 12 hours

Total: 12 hours and 15 min

Ingredients (for 1 glass)

1 tbsp washed and cleaned flixweed

2 tsp sugar (or as much/little as you like)

2 ice cubes

Few saffron threads (optional)

Dried edible flowers (optional)

Method

Clean the flixweed seeds by transferring them into a bowl with water. Move them around in it, then slowly transfer them into another bowl. If there is any sand and dust, it should sink to the bottom of the bowl. Discard it and repeat the process until there is no more sand, changing the water as needed.

Prep the drink (method 1)

Pour cool water into a glass.

Add sugar to your liking and stir well until the sugar is dissolved.

Add the flixweed seeds, a few saffron threads and dried edible flowers, if you are using any.

Add the ice cubes and serve it straight away.

Prep the drink (method 2)

If you have a large ice cube tray, you can add the flixweed seeds, saffron and dried edible flowers, followed by water and let it freeze the day before you want to serve your drink. They will melt gradually in your glass and slowly release the flixweed seeds and saffron, giving a beautiful drinking experience for you and your guests.

On the day of serving, all you need to do is to mix water and sugar in a glass and add the ice balls or cubes that you prepared the day before. Enjoy!
